Italian Almond Cake
Ingredients
1/2 cup salted butter, melted
1 cup sugar + 1 tbsp sugar (divided)
3 large eggs
1 tsp orange zest
1 cup sliced almonds, toasted
1 tsp vanilla extract
1 1/2 tsp almond extract
3/4 cup almond flour
3/4 cup all purpose flour
1/4 tsp baking powder
Powdered sugar for dusting
Steps
1. Preheat oven to 325 degrees Fahrenheit and grease and parchment line a cake pan
2. In a large bowl, whisk together melted butter and sugar.
3. Add eggs and whisk again
4. Add orange zest, almond flour and both extracts and whisk.
5. In a separate bowl, stir together dry ingredients (flour and baking powder)
6. Add dry to wet and stir well until smooth.
7. Pour into cake pan and smooth the top.
8. Sprinkle 1 tbsp sugar evenly over the top then the sliced almonds.
9. Bake on middle rack for 30 minutes or until toothpick comes out clean. This will depend on the size and shape of your cake pan.
10. Serve with espresso and italian spumoni ice cream for the perfect after dinner or afternoon treat.
