1 cup diced guanciale or pancetta (can use bacon for a cheaper alternative)
6 egg yolks
1 cup freshly grated parmigiano reggiano
1 package of spaghetti
Steps
1. In a frying pan, brown guanciale until crispy. Set aside. Reserve 1 tbsp of grease.
2. In a large bowl, whisk together 6 egg yolks and parm with fresh cracked black pepper.
3. Cook pasta and reserve 1 cup of pasta water. Mix the egg mixture, reserved grease with hot pasta and mix well adding pasta water to make desired sauciness.
4. Top with guanciale, more parm and fresh parsley. Chefs kiss!
