5 cups of sliced onions (a mix of red and yellow works great, do not use sweet onions)
1/4 cup butter
2 tablespoons olive oil
1 tablespoon sugar
1 teaspoon salt
1-2 cloves of garlic
1 teaspoon thyme
1/2 cup white wine
3 tablespoons of flour
8 cups of homemade beef broth (store bough is fine, adjust salt accordingly)
2 beef bouillon cubes
1 - 1/2 cups shredded Gruyere cheese (Swiss is a good substitute)
Homemade croutons (slice and chunk French baguette, toss in olive oil and salt, place on baking sheet and bake at 425 for 8-10 minutes until golden brown)
Steps
1. Sauté first 5 ingredients on low to medium heat for 20-30 minutes until golden and caramelized.
2. Add crushed garlic and dried thyme.
3. Stir and deglaze pan with white wine. Reduce half the liquid.
4. Add flour and stir, pour in broth and add bouillon cubes.
5. Cook soup for 15 minutes.
6. Ladle soup into French onion soup bowls, top with croutons (5-6 pieces) and sprinkle with cheese.
7. Broil in oven for 5-7 minutes until bubbly and golden.
